In the United States, poverty manifests as obesity. My dad and I read the Washington Post series on food stamps and challenged ourselves to cook healthy, nutritious, vegan meals for ourselves for thirty days on an extremely limited budget. Because food stamps actually don't allow you to buy many vegetables, we decided instead of making meals on what food stamps could buy, we would cook meals with an dollar limit. I chose $74 / week for my girlfriend and me in Brooklyn. My dad chose $64 / week for my mom and dad in Virginia. Here are our recipes, receipts and meals.
